YOUR HOLIDAY, YOUR PEOPLE

Cook alongside Sal.
Feel at home.

Sal grew up cooking with his mother Maria in Sorrento, then went on to run his own Italian restaurant in London for 17 years. Here, he shares that experience in the kitchen of his home.

You stay in Tierra Fina’s guest casitas and come together at Casa Maria to cook and eat. This is an immersive stay for a couple, two couples, family or friends, with no other participants.

Alongside the recipes come the useful habits of a working kitchen: preparing ahead, freezing well, making versatile base sauces and wasting less.

Practical skills can include preparing a whole sea bass and learning how to fillet a whole fish with Sal, from the first cut to the finished fillets. We agree the dishes and demonstrations with your group before arrival.

A LITTLE STRUCTURE. ROOM TO BREATHE.

Your long weekend.

A sample programme, shaped with your group before arrival. Dishes may vary with season and dietary needs; arrival days can be discussed personally.

  1. DAY 1 · ARRIVE

A welcome, and time to unwind.

Settle into your casita and take a little time for yourselves. Meet Sal over a welcome aperitivo, then enjoy your first Italian dinner together at Casa Maria.

  2. DAY 2 · COOK TOGETHER

Fresh pasta, sauces and a shared table.

After breakfast, spend time in the kitchen making fresh pasta: tagliatelle and ravioli, with sauces such as tomato and basil, ragù or sage butter. Learn the feel of the dough and how to work ahead. Share what you have made, with free time during the afternoon and dinner together later.

  3. DAY 3 · COOK TOGETHER

Bread, family dishes and a sweet finish.

A second cooking day explores a selection of breads or pizza, gnocchi, a traditional main and something sweet. Dishes might include focaccia, chicken cacciatore or osso buco, and tiramisù or lemon cake. The final menu is planned with your group, allowing time to eat together and relax.

  4. DAY 4 · DEPART

Breakfast, then home with new ideas.

Enjoy breakfast before departure, with recipes, practical notes and ideas for bringing a little of Sal’s kitchen into your own.

FLOUR, EGGS & A LITTLE PRACTICE

From the first mix
to the finished dough.

Make it by hand with Sal: mix, bring together and knead, learning how the dough should feel at each stage.

COME AND BE PART OF THE KITCHEN

An Italian dinner,
in our home.

Casa Maria is our home at Tierra Fina, named for Sal’s mother. This is where you cook alongside him: tasting a sauce, shaping pasta and talking about the little details that make a dish work.

Then pull up a chair in the main kitchen. There is the sound of pans at the stove, conversation around the table and the pleasure of eating what you have made together. Wine with dinner, something sweet to finish, and a little homemade limoncello to linger over.

The pace is personal and unhurried. You have your own casita to return to, and time for a quiet terrace, a book or the hills beyond.

YOUR HOME IN THE ANDALUSIAN HILLS

The Tierra Fina
part of the story.

Cooking at Casa Maria, your own casita to return to, and mountain views beyond the terrace. Tierra Fina gives your time with Sal room to become a proper escape.

For four guests, Vine and Jasmine offer two couples, family or friends their own space, with the kitchen and shared meals bringing everyone together. For two, we agree your casita arrangements personally.

A birthday, an anniversary or a present to share with your nearest and dearest: tell us the occasion and we will help you make it personal.
